Kiss Your Butt, Goodbye!

The USDA, along with The Beef Check-Off Program and the National Pork Board announced this week that they'll be renaming many popular cuts of meat, both beef and pork.  What does it mean for those of us who don't spend our day standing behind a counter wearing a paper hat?  The website offers an excellent tutorial for the new butcher case landscape.
